Banh Cuon Batter Rolls w/ Vietnamese Dipping Sauce
Ingredients:
#1 Batter:
1C Rice flour
1/2C Corn flour
1/2C Tapioca flour
21/4C Water
#2 Filling:
Minced pork
Shrimp
Black Fungus
Shiitake mushrooms
Shallots
Spring onions
Black pepper
Fish sauce
Salt
#3 Vietnamese Dipping Sauce:
Palm Sugar
Fish sauce
Chili
Garlic
Lime juice
Water
#4 Garnish
Mint leaves
Bean sprouta
Cucumber
Lettuce
Deep-fried shallots
Procedure:
1. In a bowl; combine all the ingredients for the sauce (#3). Set aside.
2. Saute the ingredients for the filling (#2) in a saute pan. Set aside.
3. In a med-sized mixing bowl; combine all the flour w/ a pinch of salt & the water to make batter. (Must be very thin).
4. Heat a pan w/ oil then cook the batter to make wraps.
5. Place the wrap in a plate then stuff it w/ the filling then make rolls.
6. Garnish w/ the mint leaves, bean sprouts, cucumber, lettuce & deep-fried shallots.
7. Serve.
